Fruit-flavour crisps … that are fat free!

Soon, potato crisps will no longer have the monopoly when it comes to snacks. Auriol (the Centre for International Cooperation in Agricultural Research for Development and Manufacturing) recently finalised the design of a new kind of machine: one that is capable of making crisps in no time at all from any fruit or vegetable … and making them very low in fat.

Deep frying thin slices of fruit in oil is nothing new but the question of their fat content remains a matter for concern. The Qualisud mixed research unit has found a way of creating a product that is almost fat free. The machine used releases all the oil that has accumulated in the fruit or vegetable during the frying process … thus creating an alternative to the “time bomb” that potato-based crisps represent.

Cooperatives in the south, a “major melon producer”, could well be interested in this process. It could bring a new economic life to products that up to now have been “unmarketable”. Eventually, this innovation could lead to the production of melon (or banana or other fruit) crisps at as little as 20 euros a kilo. And a kilo of crisps is a very large amount …
